Enhance Gantt View Day-Month Display

This enhancement restores and improves the Gantt view usability in Odoo v18 for Field Service tasks, aligning it with — and improving upon — the functionality available in Odoo v16. It focuses on improving the clarity of the date headers, ensuring complete visibility of scheduling periods, and streamlining user interactions for faster access to task details.

Current Issue in Odoo v18

1. Limited Header Information:
   • The header currently only displays the week number and dates, without showing day names.
   • The full date range of the displayed week is not visible at a glance, unlike in v16.
2. Task Interaction Changes:
   • Task details are only available on click, requiring extra steps and slowing down navigation.
   • In v16, details appeared on hover, allowing quick review without clicks.
3. Default View Mode:
   • The Gantt view defaults to Day or Month in some cases, requiring users to manually switch to Week.

Expected Behavior & Requirements

Gantt Header Enhancements

• Display day names with dates, e.g., "Monday, 28th".
• Show the full weekly date range in the header, e.g., "27 July 2025 – 02 August 2025".
• Set Week as the default display mode when opening the Gantt view for Field Service tasks.

Task Interaction Improvements

• Hover Tooltips:
  • When hovering over a task, show a tooltip containing:
    • Task Title
    • Scheduled Timing
    • Assigned User/Technician
  • Maintain the existing click functionality for editing or opening details.
